Protein Carrot Cake:
INGREDIENTS:
- 1 cup oat flour
- 2 scoops vanilla protein powder
- 2 heaping teaspoons cinnamon
- 1/8 teaspoon nutmeg
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 4 egg whites
- 1/2 cup truvia/purevia (stevia)
- 8 oz baby food carrots
- 4 oz water
DIRECTIONS:
- preheat oven to 350 F
- mix flour, whey protein, cinnamon, nutmeg, baking soda, and salt together in a bowl
- in a different bowl mix egg whites and truvia first together, then add baby carrots and water, mix again
- add wet ingredients to dry ingredients and mix together well
- spray an 8x8 inch pyrex with non-stick butter spray, then pour mixture in it
- cook for 20-30 minutes
- cut into 16 pieces and serve

It is super delicious! I suggest adding a bit more cinnamon for extra flavor, but it’s good with 2 tsps too.
Cut it in 3 rows one way, and 4 the other: 16 pieces.
