Protein Carrot Cake:
INGREDIENTS:
1 cup oat flour
2 scoops vanilla protein powder
2 heaping teaspoons cinnamon
1/8 teaspoon nutmeg
1/2 teaspoon baking soda
1/4 teaspoon salt
4 egg whites
1/2 cup truvia/purevia (stevia)
8 oz baby food carrots
4 oz water
DIRECTIONS:  
preheat oven to 350 F
mix flour, whey protein, cinnamon, nutmeg, baking soda, and salt together in a bowl
in a different bowl mix egg whites and truvia first together, then add baby carrots and water, mix again
add wet ingredients to dry ingredients and mix together well
spray an 8x8 inch pyrex with non-stick butter spray, then pour mixture in it
cook for 20-30 minutes
cut into 16 pieces and serve 
NUTRITIONAL VALUES:   
calories: 95
fat: 1.5 g
carbs: 10 g
protein: 10 g
It is super delicious!  I suggest adding a bit more cinnamon for extra flavor, but it’s good with 2 tsps too.  Cut it in 3 rows one way, and 4 the other: 16 pieces.
